APPLE CHICKEN CASSEROLE

Ingredients:
  • 3 unpeeled tart apples, cubed
  • 2 chicken breasts, skinned
  • 2 tbsp. orange juice
  • 2 tbsp. honey
  • 2 orange slices
Method:
  1. Place apples in bottom of lightly oiled casserole dish.
  2. Put chicken breasts over apples.
  3. Combine orange juice and honey in a cup.
  4. Spoon 1 tablespoon of mixture over each piece.
  5. Cover casserole and bake 45 minutes at 350 degrees.
  6. Uncover casserole.
  7. Spoon remaining orange juice and honey over chicken and bake another 30 minutes, uncovered.
  8. Garnish with orange slices.

BRANDIED CHICKEN BREAST

Ingredients:
  • 4 boned & skinned chicken breast
  • 1/3 c. flour
  • 1/2 tsp. salt
  • Ground pepper
  • 1/4 tsp. tarragon leaves
  • 1/4 c. butter
  • 1/3 c. apricot brandy
  • 3/4 c. chicken broth
  • 1/2 c. sour cream
Method:
  1. Mix flour, salt, pepper, tarragon, dredge chicken in flour mixture.
  2. Melt butter, fry chicken until browned.
  3. Add brandy, flame.
  4. Add broth, simmer covered 10 minutes or until done.
  5. Add sour cream, warm and serve.

CHICKEN CRESCENT ALMONDINE

Ingredients:
  • 1 (10 3/4 oz.) can condensed cream of chicken soup, undiluted
  • 2/3 c. mayonnaise or salad dressing
  • 1/2 c. sour cream
  • 2 tbsp. instant minced onion
  • 3 c. cooked, cubed chicken
  • 1 (8 oz.) can water chestnuts, drained and sliced
  • 1 (4 oz.) can mushroom stems and pieces, drained
  • 1/2 c. chopped celery
  • 1 (8 oz.) can crescent dinner rolls
Method:
  1. In large saucepan, combine soup, mayonnaise, sour cream and onion.
  2. Stir in chicken, water chestnuts, mushrooms and celery; cook over medium heat until mixture is hot and bubbly.
  3. Pour into ungreased 13 inch x 9 inch x 2 inch baking dish.
  4. Unroll crescent dough and separate into two rectangles, trimming to fit dish.
  5. Place dough rectangles over hot chicken mixture.
  6. Combine cheese and almonds; sprinkle over the dough.
  7. Drizzle with butter.
  8. Bake at 375 degrees for 20-25 minutes or until crust is a deep golden brown.
Yield: 8 servings.

Topping:
  • 2/3 c. shredded Swiss or American cheese
  • 1/2 c. slivered almonds
  • 2 tbsp. melted butter
